Il Coratino merges the ideas and experience of families dedicated to the enhancement of agricultural products from their local area.
The heavy 100% Italian pork legs are sent for the salting process, where they are covered with sea salt and pepper following the recipe.
A pase of freeze-dried coratine olives is added to the pork fat and interacts with the product during the long phase of natural curing. The result is a sweet superior quality ham which conceals slightly spicy fragrances and scents typical of the coratina olive.
