Pure expression of ham country

Modena is a land of strong passions which are more than gastronomic. It is home to brands of protected origin such as Prosciutto di Modena DOP. Cà Dante is a member of the consortium for the protection of Prosciutto di Modena and, respecting the quality specifications, proposes expertly processed hams with different levels of curing. Cà Dante has believed from the very beginning in the importance of belonging to a consortium of denomination of protected origin and has contributed to its growth. The first pork legs intended for the production of this DOP originated from the slaughterhouse belonging to the Pelloni family who destined the best meats to the salting process. These pork legs are entrusted to the skilled hands of the “master ham maker” who, complying with the production specification, must guard them for a minimum of 16 months. More than half of the time is spent inside the cellar, between the brick walls covered with good moulds. The resulting product has an honest taste, a delicate fragrance which is persistent on the nose, a pinkish colour turning to uniform red on the lean part with an external cover of thick white fat.
