In food, there is a parallel world to the balance of the recipe. It is the universe of sensoriality in which everyone retraces their story guided by the perfumes and flavours which they feel, smell, savour.

Free to graze on the red soil and between the oak trees.

The pigs of Castagnolo are bred in Noci, in the Itria Valley, in a space which includes a maximum of 12 animals per hectare.

Smearing, a chain of talented hands. Pork fat and chestnut flour in a perfectly balanced mixture.

Curing: the patience of reaching the perfect micro-climatic balance, following the rhythm of time and nature. Curing, the magic of a metamorphic technique.
